The White Truffle Season 2011-2012
The white truffle, the most expensive fungi in the world, is now in season. This rare truffle that is only available for these few months of the year are almost exclusively from one part of Italy. They fetch staggering prices of thousands of pounds per kilo, and are the ultimate culinary luxury. One of the reasons that these truffles are so expensive is that wild harvests continue to decline.
Unlike the Summer and Winter Truffles the white truffle cannot be cultivated, (although we may have made a little headway on this and will, as always, keep you posted on this). We have however conquered the inoculation technique of the white spring truffle (Tuber Borchii), although it doesn’t fetch the same prices as the Tuber magnatum they do sell for a good £340/kg and best of all they can be grown in the UK and tolerate a broad climatic range. We have stock of this excellent species available for planting this witer.
