Preparing the truffles
Give the truffles a quick rinse under running water and gently brush away the soil with a truffle brush (or unused tooth-brush).
A sharp knife or adjustable cheese plane can replace expensive truffle shavers, but a fixed cheese plane will slice too thick.

-2 tbsp duck fat
-4 duck eggs
-1 summer truffle
-hot buttered toast, to serve

Method
1. Heat the duck fat in a large frying pan, break in the eggs and cook to your liking.
2. Remove from the pan and divide between two plates. Shave or grate the truffle over the top and serve with hot buttered toast.
You can increase the intensity of the flavor by storing duck eggs in an airtight container with truffles in the fridge overnight. The eggs will absorb the truffle aroma.
